A wonderful week night casserole the whole family can enjoy! It's a nice twist on the regular baked potato casserole.
Ingredients
- 2 lbs chicken breasts, cubed or shredded
- 10-12 small red potatoes diced
- 1/2 cup olive oil
- 1 tsp. salt
- 1 TBS. freshly ground pepper
- 1/2 TBS. garlic powder
- 2 c. Mexican Blend Cheese
- 1/2 c. crumbled bacon
- 1/2 c. chopped green onion
Directions
Preheat your oven to 475. In a large bowl, mix together olive oil, salt, pepper, garlic powder. Add the potatoes and coat with mixture. Place the potatoes into a greased baking dish, leave as much of the mix as possible. Bake potatoes for 1 hr, flip the potatoes every 15-20 mins. Check with a fork to ensure the potatoes are done. While the potatoes are baking, coat the chicken with the left over mixture and cook in a skillet over medium heat, until the chicken is done (no longer pink inside!) Once the potatoes are done, take them out of the oven and turn the oven temperature down to 400. Add the chicken, cheese, bacon & green onions. Put the casserole back in the oven and bake for 5 minutes or until cheese is melted. Serve with sour cream or ranch dressing

You can cook it whichever way you like. I cooked it in a skillet over medium heat :)
I used ground chicken instead of cubes, but other than that made it as is. My 10 year old step son promptly burst into tears when I announced casserole was for dinner...then I took it out of the oven and he said, "Hey, that actually looks good." It was so good two suborn step kids actually had to admit they liked it.

I saw this recipe tonight's I had everything in the kitchen sounded so good I made a double recipe one for dinner for me and the hubby and one to heat through Wednesday dinner with step kids and football practice. Can't wait to see how it turns out but then again how bad can it be loaded patato with chicen- BBQ sauce is anther great topper - yumm yummy thank for the recipe and a recipe for e step kids that won't disappoint.

I'm thinking a quick version might be to steam the potatoes and then toss them in the mixture. You can then toss already cooked chicken in the mixture, and then add the rest and bake. I might turn it down to 375 and give it 10 minutes for the chicken to warm completely. I think I'll try that tonight. It just sounds delicious. Thanks, Deb

OMG!!!! my hubby is on a special diet and when I fixed this for him he was worried he was having something he wasn't supposed to. I used the Turkey bacon and he LOVED IT!!!! SO DID I!!! I will be fixing this more often!!!!! Thank you for a marvelous receipe!!!!!
Has everyone cooked the potatoes at 475 for one hour? That just seems like the potatoes would cook way too fast and be mushy. Thanks for any input! The casserole looks wonderful.

The first time I saw this recipe I was at work and I got home and I couldn't remember everything exactly right, so i added green and red bell peppers to the dish and it was SOOO delicious. i cooked the chicken with random spices, and then i diced up all the potatoes and put them in a bowl with the same spices, and then poured the olive oil over it and mixed it up. then when the chicken was done i cubed it up and threw it in a different bowl with the bell peppers and the bacon and a little cheese. then i mixed it all together in the baking pan, put cheese on top, covered the pan with tin foil so the potatoes would bake faster, and baked it for about 20 minutes on 425. almost the bombest thing I've ever made, and i like to experiment!
