From My Kitchen To Yours!

In an earlier post, I shared a picture with you of our dessert on Easter Sunday...


Yeah, this one.... a little slice of heaven! 

Anyways, I thought I would share the love and pass on this scrumptious recipe.

Sopapilla Cheesecake

Ingredients

  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 1 teaspoon Mexican vanilla extract
  • 2 (8 ounce) cans refrigerated crescent rolls
  • 3/4 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter, room temperature
  • 1/4 cup honey 

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Prepare a 9x13 inch baking dish with cooking spray.
  2. Beat the cream cheese with 1 cup of sugar and the vanilla extract in a bowl until smooth.
  3. Unroll the cans of crescent roll dough, and use a rolling pin to shape each piece into 9x13 inch rectangles. Press one piece into the bottom of a 9x13 inch baking dish. Evenly spread the cream cheese mixture into the baking dish, then cover with the remaining piece of crescent dough. Stir together 3/4 cup of sugar, cinnamon, and butter. Dot the mixture over the top of the cheesecake.
  4. Bake in the preheated oven until the crescent dough has puffed and turned golden brown, about 30 minutes. Remove from the oven and drizzle with honey. Cool completely in the pan before cutting into 12 squares. 
Let me just add that I generally do NOT like honey... but it really complimented the cheesecake well.
A definite must try!!

Seussville

Since we decided on a Dr. Seuss theme for Drew's nursery, I have been obsessed with all things Seuss.... surfing the web night and day for ideas and inspiration. I am so glad we went with this theme, there is SO much out there and I think it is the perfect way to welcome Drew home... 

I love to read to Noah... we have TONS of Dr. Seuss books... they are so much fun to read! 

I wanted to add a personal touch to Drew's nursery since I hand painted Noah's room....


We are still painting Drew's room with something on the wall... I just can't seem to leave a wall plain and simple lol! But instead of painting something on the wall with such detail, I pulled out a canvas and started on this..... ( easier for me to do right now, in this oh so pregnant condition)


It is still a work in progress... but it is coming along and is something Drew will always have... special from me to him!

Well I am off to put my little man to bed!

Life Lately!

Spring is in full swing and I am LoViNg it!! I will take these warm temps and sunshine over winter ANY day. 

Last weekend I decided to snap a few pics of the family

Please excuse how ummm....huge I look! I'm 34 weeks preggo today and believe me I am feeling it!

We have had a great Easter weekend. Adam got off early on Thursday giving us a looong family weekend!

Friday we went to Memphis and enjoyed the day out and about.

On Saturday we lounged around, set up Noah's pool (which was part of his Easter goodies, just given to him a little early,) and spent some quality time together.

And that brings us to today...


As you can see, Noah hit it BIG with the Easter bunny!


Waiting for Daddy to deliver his basket of goodies... or prizes as Noah calls them! 


He was a happy camper to say the least!


Our Easter dinner... Ribeye steaks, green bean bundles, corn on the cob & twice baked mashed potatoes... It was delicious!


And for dessert... Sopapilla cheesecake with vanilla ice cream and fresh strawberries... so so good!

Spring has definitely started out in a wonderful way and I can't wait to see what the rest of the year has in store... Our sweet Drew will be here SOON!!!! 

God has blessed our family in many ways... and I am thankful for that everyday but today I am especially reminded of everything he has done. I am so grateful!
